Thai Basil Stir Fry
A quick, easy and FLAVORFUL dish. Findlay Kitchen member Tracey Strickland of Mae shares her passion for Thai flavors in the following video:

  • 1-2lbs finely chopped chicken breast
  • 10 cloves garlic chopped
  • 3 shallots finely sliced
  • 5-6 fresh kaffir lime leaves, sliced
  • 5-20 fresh thai red chilis (to taste)
  • 2 cups fresh thai sweet basil
  • 1 tbsp black soy sauce
  • 2 tbsp thai fish sauce
  • 1 tbsp white pepper powder
  • 2 tbsp peanut oil / sub vegetable oil if peanut allergies
  • Thai jasmine rice, steamed

Foul Moudamas (Fava Bean Breakfast Dish) 
Foul Moudamas is a delicious brunch dish that is high in protein, fiber, minerals and fills you up for long time. Kate Zaidan from Dean's Mediterranean Imports shows us how to whip this dish up:

  • 1 15 ounce can cooked small fava beans
  • 1 tablespoon ground cumin
  • 4 cloves garlic, mashed
  • ½ cup lemon juice
  • ¼ cup olive oil
  • 1 medium red onion, finely chopped
  • 2 ripe tomatoes, diced
  • 1 pinch parsley, finely chopped
  • salt and pepper to taste
  1. Pour the cooked fava beans with the liquid into heavy saucepan.
  2. Add the mashed garlic, cumin, salt and pepper. Bring to a boil.
  3. Using potato masher, mash the fava beans partially and cook over medium heat for 10 minutes.
  4. Add the lemon juice, the olive oil and half of the chopped vegetables. Stir, adjust the seasoning and remove from the heat.
  5. Spoon the foul moudamas into shallow serving dish and top with the rest of the chopped vegetables.
