Chicken Fried Cabbage

Makes 8 servings.

INGREDIENTS (WHERE TO BUY):

PREPARATION:

  • Warm a large saute pan over medium-high heat. Then add olive oil and chicken. Fry for 5-7 minutes or until browned.
  • While the chicken is frying, slice cabbage into thin strips, similar to a coleslaw cut.
  • Add cabbage and paprika to the chicken. Stir and saute for another 5-10 minutes.
  • Meanwhile, puree the tomato in a blender or food processor.
  • Add puree, chicken stock, carrots and bay leaves. Stir and season with salt and pepper. Reduce heat to low and cover with a tight lid. 
  • Cook, stirring occasionally for 45 minutes or until no liquid is left.
  • Serve warm.
