Coconut Milk Turmeric-Spiced Basmati Rice

Makes 6 servings.

PREPARATION:

  • Heat olive oil over medium heat in a medium-sized saucepan. Add onion, garlic, ginger and salt. Stir and cook for 5-7 minutes. 
  • Add the rice and turmeric and stir until evenly combined. Let the rice brown for a few minutes then add coconut milk and water. Stir and raise heat to boil.
  • Once boiling, lower the heat to the lowest setting and cover. Cook for 15-18 minutes. Fluff with a fork and stir in basil.
