Sweet Corn and Bacon Salad

Yields 4 servings.

INGREDIENTS (WHERE TO BUY):

PREPARATION:

  • Heat a large skillet over medium-high heat.
  • Once hot, add bacon and saute until crunchy (about 10 minutes).
  • Remove the bacon from the skillet with a slotted spoon, leaving the drippings in the pan.
  • Keep 2 tablespoons of drippings and throw away the rest (or you can just keep them all!)
  • In a separate bowl, shave the corn from the cobs with a sharp knife.
  • With the back of the knife, firmly scrape the cobs over the bowl to extract as much milk from them as possible. Set aside
  • Add the peppers and paprika to the skillet with the bacon drippings. Saute for a couple of minutes and add the corn.
  • Stir and saute for 5 minutes or until the corn is tender. 
  • Stir in bacon and serve hot.
